About

DA CHOCO is a “crispy chocolate” sensation created by two-MICHELIN-starred chef Eric Räty of Arbor and DALLOYAU, the esteemed French culinary brand serving the royal court of Versailles since 1682. Proudly crafted in Hong Kong, this portable MICHELIN-rated dessert blends French artistry with local influences and is designed for sharing with loved ones.

Chef Eric, formerly the pastry chef at the MICHELIN Three-Star Restaurant Aqua in the Ritz Carlton Wolfsburg, earned his first MICHELIN star just eight months after Arbor opened in 2018, followed by a second star in 2019. Known for his innovative use of seasonal ingredients, he draws inspiration from local markets to create unique recipes. DA CHOCO showcases his creativity and offers a taste of his desserts to diners and travelers alike.

On the other hand, DALLOYAU, a prestigious name in French culinary circles and the inventor of the world’s first Opéra cake, represents the pinnacle of craftsmanship in French pastry excellence. Its pastry team will ensure that the chocolate meets the highest standards of French dessert quality, in terms of ingredient selection, techniques and quality control.

With its delicate shell, crispy fillings, and innovative flavours, DA CHOCO's crispy chocolate is not just a treat but a unique gift celebrating the vibrancy and creativity of Hong Kong.
